Peel with Zeal
Slice your squash and zucchini into 1/4 inch to 1/2 inch rounds.
Mix olive oil and seasonings in bowl. Add the veggies and toss until coated.
Mix together parmesan and the breadcrumbs. Sprinkle over the veggies.
Roast in the oven for 10 to 12 minutes. Broil if needed to get the tops golden brown.
