Easy White Asparagus (GF)

White asparagus is the quintessential Spring side dish.  We added a classic 3-minute hollandaise sauce and fresh herbs.

Cut or peel off the woody ends. 

Blanch

Cook the asparagus until just tender and submerge in an ice bath.

Blend

Add the yolks, herbs, and lemon juice to blender. Stream in melted butter.
