Whisk Yolks

Whisk egg yolks and sugar until ribbon forms. Add maple syrup. 

Add Cream

Add cream and vanilla. Mix well.

Bake

Fill ramekins, strain to remove bubbles, bake in a water bath until center is set.

Sprinkle with sugar and use blow torch or broil to caramelize.
