Saute

Saute your carrots, onions, and celery until just soft. 

Simmer

Add the remaining ingredients and simmer for 20 minutes.

Puree

Blend your soup until smooth using a blender, food processor, or immersion blender. 

Melt

Stir in cheese and cream.  Whisk until fully melted. Do not place back on heat.
