Peel with Zeal
Soften the onion in a saucepan over moderately low heat.
In a different saucepan, bring the broth to a simmer and add the tomatoes.
Add the garlic, rice, and wine to the onions, and stir in the tomatoes.
Add the simmered broth, then mix and stir constantly.
Season to taste, stir in the parmesan, and sprinkle the parsley.
