Peel with Zeal
Mix together the marinade ingredients and marinate the beets for 10 minutes.
Put down a base of sushi rice. You can substitute cauliflower rice, basmati rice or quinoa.
Cut your veggies into bite sized pieces. Be creative.
Arrange the beets, avocado, edamame, cucumber, and carrots on top of the rice and drizzle with sriracha mayo.
