Peel with Zeal
Form the patties (6 to 8oz each) and season the outside with salt and pepper.
Melt butter in cast iron skillet and sear patties for 4 minutes. Flip and cook until medium-rare or preferred temp.
Toast buns in burger fat until crispy.
Mix together mayo, dijon, garlic, and lemon juice to make a simple aioli.
Melt your cheese, and add toppings of choice.
