Sweet Potato Nachos with Shredded Beef

- 1 bag sweet potato chips
- 1 c citrus shredded beef warmed
- 1/2- 3/4 c horseradish cauliflower sauce warmed
- 1/3 c four -ingredient avocado sauce
- 1/4 c cilantro leaves
- 1/4 c scallions, sliced
- optional toppings- jalapenos, tomatoes, sour cream
Line sheet pan with parchment paper. Arrange sweet potato chips. Top with shredded beef and horseradish cauliflower sauce.
Broil for 3-6 minutes. Keep a close eye, don't let the chips burn.
Top with a drizzle of four ingredient avocado sauce, cilantro and scallions.
