Ingredients

  • 1 1/2 c fresh pineapple, diced
  • 1 c cucumber, seeded and diced
  • 1/2 c red onion, diced
  • 2 Tbsp fresh cilantro, finely chopped
  • 1 Tbsp fresh mint, finely chopped
  • 1/2 lime, juiced
  • 1 Tbsp olive oil
  • salt, to taste

Instructions

  • Combine all the ingredients in a bowl. Gently toss to combine. Salt to taste.
