Roasted Red Onions
Easy roasted red onions and be made ahead and served with any dish.

- 2 red onions
- 1 tbsp olive oil or coconut oil
- kosher salt & black pepper
Preheat oven to 400 F degrees. Line rimmed baking sheet with parchment paper or lightly brush with oil.
Cut onions into 1/2 inch slices. Arrange onions on a baking sheet. Brush lightly with oil and season with salt and pepper.
Roast until caramelized and tender, 15 to 20 minutes. Flipping once halfway through.
