Crispy, air-fried zucchini fries are a light and flavorful snack or side dish that’s quick to prepare and perfect for any occasion. Grab your favorite dipping sauce and let's get crunching.
Trim the ends of the zucchini and cut in half lengthwise. Scrape out extra seeds. Cut into match sticks, ¼-½ inch wide and 3-4 inches long. Pat dry the zucchini, but do not salt.
Set up 3 bowls for your breading station. The first bowl should be the flour by itself. The second bowl should have the eggs. In the final bowl mix together the breadcrumbs, cheese, Italian seasoning, and salt.
Toss the zucchini in the flour to coat on all sides. One at a time dip in the egg mixture and then the breading.
Spray the basket with a non-stick oil. Add the zucchini and cook for 8 minutes. Shake to flip, cook another 8 minutes or until golden brown and the inside is fork tender. Work in batches if needed.
Serve immediately with marinara, ranch or your favorite dipping sauce.
Notes
Store leftover zucchini fries in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 375°F for 3-5 minutes to restore crispiness. Avoid reheating in the microwave, as they may become soggy.
