This crispy air fryer zucchini fritters recipe is an easy way to make a flavorful veggie packed side dish. Serve it with a creamy yogurt dill sauce, and it's sure to be a hit at your dinner table.
Grate the zucchini into clean towel, twist the towel to squeeze out the excess liquid from zucchini. Get as dry as possible.
Add the zucchini to a mixing bowl. Add the remaining ingredients and stir to combine. Divide into 8 portions and shape into patties. Place the patties on a plate and refrigerator while you preheat the air fryer.
Working in batches if needed. Place the zucchini patties in the air fryer and lightly spray with the cooking oil. Cook for 7 minutes. Flip and cook for another 7 minutes. Repeat until all the fritters are cooked.
Serve with the yogurt dill sauce.
Notes
I don't recommend salting the zucchini before you squeeze out the water. It will break down the cell structure making it mushy.
Storing Leftovers and Reheating
Store leftover zucchini fritters in an airtight container in the refrigerator for up to 4 days. You can layer them with parchment paper to prevent them from breaking apart or sticking together. Reheat them in the air fryer at 350°F for 3-5 minutes or until warm and crispy.
