Ingredients
2cupszucchinigrated, about 1 large zucchini or 2 small
Place the zucchini it in a colander. Toss with ½ teaspoon salt and let sit for 10 minutes to draw out excess moisture. Transfer the zucchini to a clean tea towel and squeeze firmly to remove as much liquid as possible.
Add the drained zucchini to a bowl with the remaining vegetables and cheese. Toss to combine. Then add the remaining patty ingredients, excluding the oil. Stir until well combined. Form the patties by scooping ¼ cup of the zucchini mixture onto a plate and gently flattenng into an even layer. Chill while you prep the pan.
Heat a griddle or skillet over medium heat. Add 1 tablespoon oil. Cook for 4 to 6 minutes per side, or until golden brown and crisp. Add additional oil to the skillet as needed.
Serve with the garlic dipping sauce or sauce of your choice.
Garlic Dipping Sauce
Stir together all of the sauce ingredients in a small bowl until smooth and creamy. Refrigerate until ready to serve.

Air Fryer Instructions: Heat to 375°. Cook them for 7 minutes, flip them over, and cook for an additional 7 minutes until golden brown. Storing Leftovers: Store in an airtight container in the fridge for up to 4 days. Reheat on the griddle or skillet to crisp them back up. You can also reheat in the air fryer to make them extra crispy. You can freeze them cooked or uncooked in an airtight container for up to 1 month.
