In a large oven safe skillet melt the butter over medium heat. Add the onions and salt, sauté until the onions begin to soften. Turn the heat to low and cook for 20 to 30 minutes, stirring occasionally.

Add the chicken stock and cover. Bring to a boil and then reduce the heat to low and cook for 20 minutes.
With 5 to 10 minutes left in the cooking time, preheat the boiler.
Remove the lid and sprinkle the cheese over the rice. Broil for 3 to 5 minutes until the cheese is melted and golden brown. Serve immediately.
