Ingredients
2Tablespoonsunsalted butter
1shallotfinely diced
2garlic clovesminced
2cupschicken stockor vegetable broth
1cupjasmine riceor other long grain white rice
2lemonszest and juice
¼cupminced fresh basilplus more for garnish
Instructions
In a medium saucepan, heat the butter over medium heat. Add the shallot and garlic. Saute for 2 to 3 minutes, stirring frequently.
Add the broth and bring to a boil. Add the rice and salt (see note below). Cover and reduce heat to a simmer. Cook for 20 minutes or according to package directions.
Remove the rice from the heat. Allow to sit covered for 5 more minutes. Transfer rice to a bowl. Fluff with a fork. Stir in the lemon juice and zest, and basil. Salt and pepper to taste.
Notes
If you use low sodium stock or water you will need to add between ¼ and ½ teaspoon of kosher salt.
I recommend rinsing rice before cooking until the water runs clear.
🌡️Storing Leftovers
Transfer the leftover rice to an airtight container and refrigerate for 3-4 days. Reheat it in a microwave or at stovetop over medium heat until completely warmed through. Add a splash of water or broth if needed.
