Preheat oven to 425 F degrees. Remove salmon from the brine. Rinse and pat dry. Place salmon on rimmed baking sheet. Brush with coconut oil and season with salt and pepper.
Bake for 6 to 8 minutes until flaky for medium-rare. For well done 10-12 minutes.
Pineapple, Cucumber and Mint Relish
Combine all the ingredients in a bowl. Gently toss to combine. Salt to taste.
To Serve
Place salmon fillets on a platter. Spoon a ¼ cup of relish over each fillet. Serve the remaining relish on the side.
