Prepare and grate the zucchini. Then, place it into a clean towel.
Twist and squeeze the towel to remove excess water. Repeat and set aside.
Whisk the eggs, cream, and seasonings.
In a separate bowl, mix the cheeses, shallots, chives, and potato starch.
Layer the quiche starting with the cheese mixture and top with zucchini. Repeat the layers.
Bake for 40 to 45 minutes. Allow it to cool before serving.
