Add lemon juice and blueberry syrup to a champagne flute. Top with champagne or sparkling wine.
Blueberry Simple Syrup
Add all ingredients to a saucepan. Lightly crush blueberries. Place over medium-high heat. Bring to a boil, then reduce heat to a simmer. Simmer for 15 minutes, stirring occasionally to ensure the sugar dissolves the blueberry breaks down.
Strain the syrup through cheesecloth and/or a mesh strainer. Cool to room temperature before using.
Notes
The blueberry syrup can be stored for up to 2 weeks in the refrigerator.
The blueberry syrup is enough for 8 servings of the mimosas.
