My Cajun sausage spaghetti is an easy weeknight dinner recipe that comes together in just 30 minutes. Made with smoked andouille sausage, Cajun spices, and a creamy sauce, this pasta dish is packed with bold flavors that will set fire to your taste buds!
Bring a large part of salted water to a boil. Cook your pasta according to package directions. Reserve ½ cup pasta water. Drain but do not rinse.
While the water is heating. Heat the oil in a large skillet. Brown the sausage on both sides, about 3 minutes per side. Remove from the pot. Do not wipe out the pot.
Add onion, celery, bell pepper and mushrooms. Cook for 4 to 5 minutes until the vegetables begin to soften and the moisture from the mushrooms evaporates.. Add the garlic and cook for 30 seconds. Add the Cajun seasoning. Cook for one minute, stirring to coat the vegetables.
Add the tomatoes and a ½ cup of the pasta water. Simmer for 5 minutes. Add the sausage back and cook for 1-2 minutes to warm through.
Turn off the heat and stir in the heavy cream. If the sauce is too thick, add a little of the reserved pasta water. Stir in the pasta and serve with parmesan and minced parsley.

Store leftover pasta in an airtight container and refrigerate for up to 4 days or freeze for up to 2 months. Reheat in the microwave for 1-2 minutes (30-second intervals, stirring in between), or on the stovetop over medium heat. Add a splash of cream or milk to loosen up the sauce.If reheating from frozen, let it thaw overnight in the fridge, then reheat using the stovetop or microwave method.
