This andouille sausage spaghetti is anything but boring! Spicy pasta with bold Cajun flair, it's made with the holy trinity and my own homemade seasoning blend. Pair it with garlic bread and a crisp kale Caesar salad, and you're set. Pasta lovers, it’s time to elevate spaghetti night!

📖Why My Recipe Works
- Pasta Water- During my recipe testing, adding chicken stock was too salty, and using reserved pasta water gave this recipe a better flavor.
- Fire Roasted Tomatoes- We're skipping diced tomatoes and using fire-roasted tomatoes to enhance the smoky flavor.
🧾Ingredient Notes
- Spaghetti- If you use gluten-free pasta, I recommend Jovial Spaghetti. You can also substitute spaghetti with fettuccine, linguine, penne pasta, or even bowtie pasta.
- Andouille Sausage- If you don't have andouille, you can use other smoked sausages like Italian sausage, chorizo, or kielbasa.
- Cajun Trinity + Mushrooms- We're adding mushrooms to the Cajun trinity (onions, bell pepper, and celery). Use cremini or button mushrooms.
- Garlic- If you don't have fresh garlic, skip it. There is garlic powder in the Cajun seasoning.
- Cajun Seasoning- Use store-bought Cajun seasoning, or better yet, make my homemade Cajun seasoning blend.
- Fire-roasted Tomatoes- Substitute with crushed tomatoes or diced tomatoes.
- Heavy Cream- For a lighter version, use half and half or coconut milk for dairy-free.
- For more heat, add red pepper flakes or cayenne pepper.
⏲️How to Make Cajun Spaghetti
- Cook the sausage for 3 minutes per side to develop a deep, caramelized crust. Remove the sausages but don't wipe the pan, the browned bits left behind add flavor.
- Add the fresh veggies. Keep stirring until most of the moisture evaporates and the mushrooms start to brown. We're adding the garlic last because we don't want it to burn. Then, add the Cajun seasoning and stir to coat the vegetables evenly.
- Add the fire-roasted tomatoes and reserved pasta water. Pasta water contains starch, which helps thicken the sauce. Start with a small splash and add more later as needed.
- Stirring in the cream after turning off the heat prevents it from curdling and keeps the sauce smooth and rich. If the sauce is too thick, add more pasta water.
- Add the cooked spaghetti and stir to combine. Serve with parmesan and minced parsley, and enjoy!
👩🏻🍳 Expert Tips
- Since the pasta will finish cooking in the sauce, undercook it by about 1 minute to prevent it from getting mushy.
- Cajun seasoning can be salty, depending on the brand. Start with a small amount and adjust with more seasoning or a pinch of salt before serving.

Cajun Sausage Spaghetti
Ingredients
- 12 ounces spaghetti regular or gluten free
- 1 Tablespoon olive oil
- 12 ounces andouille sausage cut into ½ inch slices
- ½ cup diced onion
- ½ cup bell pepper diced (red or green)
- 1 celery stalk diced
- 8 ounces sliced mushrooms
- 2 cloves garlic minced
- 1 Tablespoon Cajun seasoning
- 15 ounce canned fire roasted tomatoes
- ½ cup heavy cream
- parmesan and parmesan cheese for serving
Instructions
- Bring a large part of salted water to a boil. Cook your pasta according to package directions. Reserve ½ cup pasta water. Drain but do not rinse.12 ounces spaghetti
- While the water is heating. Heat the oil in a large skillet. Brown the sausage on both sides, about 3 minutes per side. Remove from the pot. Do not wipe out the pot.1 Tablespoon olive oil, 12 ounces andouille sausage
- Add onion, celery, bell pepper and mushrooms. Cook for 4 to 5 minutes until the vegetables begin to soften and the moisture from the mushrooms evaporates.. Add the garlic and cook for 30 seconds. Add the Cajun seasoning. Cook for one minute, stirring to coat the vegetables.½ cup diced onion, ½ cup bell pepper, 1 celery stalk, 8 ounces sliced mushrooms, 2 cloves garlic, 1 Tablespoon Cajun seasoning
- Add the tomatoes and a ½ cup of the pasta water. Simmer for 5 minutes. Add the sausage back and cook for 1-2 minutes to warm through.15 ounce canned fire roasted tomatoes
- Turn off the heat and stir in the heavy cream. If the sauce is too thick, add a little of the reserved pasta water. Stir in the pasta and serve with parmesan and minced parsley.½ cup heavy cream, parmesan and parmesan cheese
