Honey Granola with Olive Oil
This homemade granola recipe is the perfect not-too-sweet breakfast or snack that you can whip up in just a few minutes. Baked to golden brown perfection, this honey granola delivers a satisfying crunch in every bite!

Ingredients

oats
gluten-free certified if needed

1 ½
cup
pepitas
or slivered almonds
▢
⅔
cup
honey
▢
⅔
cup
olive oil
▢

teaspoon
vanilla extract

teaspoon
kosher salt

cup
coconut flakes
unsweetened
Instructions
Preheat oven to 300 degrees.
In a large bowl mix together all the ingredients EXCEPT the coconut. Spread out on a rimmed baking sheet.
Bake for 30 minutes, tossing halfway through. add the coconut and bake an additional 5 minutes.
Let cool. Break into pieces and mix in dried fruit (if using).
Notes
You can bake on parchment paper but I don't find that it is necessary for this recipe.
Add up to 1 ½ cups of dried fruits (cherries or cranberries recommended).

Store your granola in an airtight container at room temperature for 2 to 3 weeks.
