This honey granola with olive oil is my go-to recipe for a wholesome breakfast or snack that's quick to throw together. Rolled oats, honey, nuts, and coconut flakes come together for a subtly sweet, crunchy granola. An easy, make-ahead recipe for busy days!

Skip store-bought granola, this recipe makes it easy to make granola from scratch. I love to eat this as a snack throughout the day, or with a bowl of Greek yogurt or milk in the morning. If you loved this recipe, you need to try my peanut butter baked oatmeal too!
📖Why My Recipe Works
- A Touch of Savory- We're using olive oil and a good amount of salt for a well-balanced flavor.
- Perfect Sweetness- I go light on the honey which makes this granola is not too sugary overall; it's a snack you can feel good about.
🧾Ingredient Notes
- Oats- I recommend using rolled oats for the perfect granola texture. I don't recommend using steel cut oats or instant oats. Make sure that it's certified gluten-free if needed.
- Nuts/Seeds- You'll need a total 1 ½ cups of nuts or seeds. I typically use pepitas (aka pumpkin seeds). Use any combination, including sunflower seeds, pecans, almonds, etc.
- Honey- Try different types of honey to change the flavor. Orange blossom is my favorite.
- Olive Oil- Use extra-virgin olive oil for the best flavor. You can substitute with coconut oil but it doesn't add the same level of flavor.
- Vanilla Extract- You can also use almond extract.
- Coconut Flakes- You can also use shredded coconut for a finer texture, but Do NOT USE sweetened coconut. It will be way too sticky and sweet.
💭 Flavor Variations
- Add 3 teaspoons of ground cinnamon to the mix.
- Add 2 teaspoons cinnamon, 1 teaspoon nutmeg, and 1 ½ teaspoons ground ginger for a gingerbread flavor.
- Mini chocolate chips, white chocolate chips, or cacao nibs.
- Add 3 teaspoons pumpkin pie spice to the mix.
- Add in 1 ½ cups of your favorite dried fruit like raisins, cranberries, cherries, apricots, or chopped dates.
- Use maple syrup instead of honey, 1:1 ratio.
⏲️How to Make Granola with Honey
- Mix the oats, honey, nuts, olive oil, and vanilla together in a bowl until evenly coated.
- Spread the granola mixture in a thin, even layer on a baking sheet and bake for 30 minutes, tossing halfway for an even bake.
- Coconut flakes toast quickly, so you should add them in the last 5 minutes.
- Let the granola cool completely before breaking it into pieces—this ensures it crisps up. Wait for it to cool before adding dried fruits to maintain the chewy texture.

When tossing halfway, do it gently to keep clusters intact if you like chunkier granola.

Honey Granola with Olive Oil
Ingredients
- 4 cups oats gluten-free certified if needed
- 1 ½ cups pepitas or slivered almonds
- ⅔ cup honey
- ⅔ cup olive oil
- 1 teaspoon vanilla extract
- 1 teaspoon kosher salt
- 1 cup coconut flakes unsweetened
Instructions
- Preheat oven to 300 degrees.
- In a large bowl mix together all the ingredients EXCEPT the coconut. Spread out on a rimmed baking sheet.4 cups oats, 1 ½ cups pepitas, ⅔ cup honey, ⅔ cup olive oil, 1 teaspoon vanilla extract, 1 teaspoon kosher salt
- Bake for 30 minutes, tossing halfway through. add the coconut and bake an additional 5 minutes.1 cup coconut flakes
- Let cool. Break into pieces and mix in dried fruit (if using).
Notes
- You can bake on parchment paper but I don't find that it is necessary for this recipe.
- Add up to 1 ½ cups of dried fruits (cherries or cranberries recommended).
