Baked oatmeal is a great way to fuel you throughout the day. The best part about this oatmeal bake is that you can make a bowl of it and portion it to eat throughout the week. It makes my day so much easier and I like to make it as much as my instant overnight oats, but I think this recipe is better for cozy days.

📖Why My Recipe Works
- Mashed Bananas- I used mashed bananas instead of extra sugar to make the oatmeal both moist and sweet.
- Not Blended- Blended oats essentially give you a weird bread consistency. I would suggest trying my oat flour banana bread if that is the texture you are going for.
🧾Ingredient Notes
- Peanut Butter- I like using creamy peanut butter, but you can use crunchy peanut butter if you like a crunchy bite. You can also use almond butter, cashew butter, or other nut butter.
- Old-Fashioned Oats- Use certified gluten-free rolled oats, if needed. Don't use instant oats as the final bake will be too mushy.
- Bananas- Use ripe bananas and mash them thoroughly.
- Almond Milk- Use any milk that you like.
- Eggs- You can substitute with flax egg if needed.
- Baking Powder- Helps the oatmeal have a light, fluffy texture.
- Maple Syrup- Or honey.
- Cinnamon- Try nutmeg or pumpkin pie spice for a similar flavor.

You can top this peanut butter oatmeal with chopped peanuts, mini chocolate chips, toasted coconut flakes, Greek yogurt, or dried fruits.
My family really loves the peanut butter flavor, so our favorite way to serve it is by drizzling warm peanut butter at the end and topping it with sliced bananas.
For a peanut butter and jelly version, you can also drizzle it with your favorite jam and add a little fruit to the oats. Strawberry would definitely be my pick. You could even try it with my strawberry butter on top.
⏲️How to Make Baked Oatmeal
Combine Wet Ingredients: Peanut butter is thick and sticky, so it's important to microwave it for a few seconds to make it thinner and easier to stir. Make sure your bananas are fully mashed, without any chunks before mixing them with room temperature milk and eggs, peanut butter vanilla, and maple syrup.
Mix the Dry Ingredients: Add the oats, baking powder, salt, and cinnamon and fold them gently until fully combined, making sure there aren't any lumps.
Transfer: Pour the oatmeal mixture evenly into the baking dish. Before baking, you can add chopped nuts, dried fruits, or chocolate chips on top.
Bake: You'll know that it's baked when the top is golden brown. Check for doneness by inserting a toothpick or knife in the center. It should come out clean when done.
Can you Make Baked Oatmeal for Meal Prep?
Yes, baked oatmeal is perfect for meal prep. It's best to bake it fully, let it cool, then slice it into individual portions and store it in airtight containers. Refrigerate it for up to a week or freeze it for up to 3 months. When ready to serve, you can reheat it in the microwave for 1-2 minutes.

Expert Tips

Peanut Butter Baked Oatmeal (One Bowl Recipe)
Ingredients
- ½ cup peanut butter creamy or chunky
- 2 ripe bananas mashed
- 2 Tablespoons maple syrup
- 1 cup almond milk or any milk of choice
- 2 eggs
- 1 teaspoon vanilla extract
- 2½ cups old-fashioned oats
- 1 teaspoon baking powder
- ¾ teaspoon kosher salt
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350°. Grease an 9x9 inch baking dish.
- Melt peanut butter in the microwave for 30 seconds to make it easy to stir. In a large miking bowl whisk milk, eggs, vanilla, peanut butter, mashed bananas, and syrup until well combined.½ cup peanut butter, 2 ripe bananas, 2 Tablespoons maple syrup, 1 cup almond milk, 2 eggs, 1 teaspoon vanilla extract
- Sprinkle over the remaining ingredients and stir until fully combined. Pour into baking dish.2½ cups old-fashioned oats, 1 teaspoon baking powder, ¾ teaspoon kosher salt, 1 teaspoon cinnamon
- Bake for 35 minutes or until set and golden brown on top. Cool for 5 minutes before serving.
