This single serve baked oatmeal recipe is definitely my life hack for busy weekdays. It's easy to throw it together on a Sunday and reheat the next morning. It's filled with wholesome ingredients, just like my overnight oats, but feels indulgent, like oatmeal cookies but in a baking dish form!
It is based on my baked oatmeal recipe with peanut butter which is always a crowd pleaser.

📖Why My Recipe Works
- Lightly Sweet- Instead of adding sugar, I focused on using natural sweeteners like maple syrup and blueberries, so you have a subtle sweetness that doesn't overpower the other flavors. You can mix in more ingredients like chopped nuts, chocolate chips, and other fruits for more flavor.
- No Protein Powder- This recipe works really well because I didn't add protein powder. Adding protein powder makes the baked oatmeal dry and gives it a weird aftertaste, which you would have to add more sugar to cover up.
🧾Ingredient Notes
- Old Fashioned Oats - Use rolled oats and not quick cooking oats. It will be too mushy for baking.
- Almond Milk- Or use oat milk, coconut milk, or any milk that you like.
- Egg- To bind everything together.You can also use flax egg to make it vegan.
- Baking Powder- Just to help make the baked oats light and fluffy.
- Blueberries- Fresh blueberries are definitely the best, but you can also use frozen ones in a pinch.
- Maple Syrup- Honey or maple syrup will work.
- Vanilla Extract- Or use almond or banana extract for a flavor variation.
- Kosher Salt- Always add salt to balance the sweet!
💭 Variations
If you don't like blueberries, you can swap them with other fruits like apples, mashed bananas, strawberries, or other berries. You can also add your favorite toppings like chopped nuts, chocolate chips, peanut butter, and chia seeds.
But remember, if you add something like chia that is highly absorbent, you need to add more liquid.
⏲️How to Make Baked Oatmeal for One
Mix the Wet Ingredients
Combine the wet ingredients together in a bowl. Let the milk and eggs come to room temperature before adding for a smooth texture.
Add the Dry Ingredients
Add the dry ingredients to the same bowl and mix until there are no lumps. Gently fold in the blueberries to the oatmeal mixture, being careful not to crush them.
Bake
Grease your ramekin with butter or coconut oil to prevent the oatmeal from sticking. Then bake the oatmeal until it's set and golden brown on top. Serve it while it's warm and fresh out of the oven!
Expert Tip
- To make this oatmeal recipe ahead, fully bake it and store it in an airtight container in the fridge for up to 5 days. Then, reheat it in the microwave before serving.
- To check if it's cooked, insert a toothpick in the center. It should come out clean or with a few moist crumbs. If the top browns too quickly, cover it loosely with foil.
- Serve it with a drizzle of peanut butter, more fresh fruits, or a dollop of Greek yogurt or ice cream!

Single Serve Baked Oatmeal
Ingredients
- 1 Tablespoon maple syrup
- ⅓ cup almond milk or any milk of choice
- 1 egg
- ½ teaspoon vanilla extract
- ½ cup old-fashioned oats
- ⅓ teaspoon baking powder
- pinch kosher salt
- ¼ cup blueberries
Instructions
- Preheat oven to 350°. Grease a ramekin (5 ounce or similar size).
- In a small mixing bowl whisk milk, egg, vanilla, and syrup until well combined.1 Tablespoon maple syrup, ⅓ cup almond milk, 1 egg, ½ teaspoon vanilla extract
- Sprinkle over the remaining ingredients and stir until fully combined. pour into baking dish.½ cup old-fashioned oats, ⅓ teaspoon baking powder, pinch kosher salt, ¼ cup blueberries
- Bake for 20-22 minutes or until set and golden brown on top. Cool for 5 minutes before serving.
