Peach Mezcal Cocktail

Ingredients
- 1 ripe peach peeled and pitted, or ½ cup peach puree or thawed frozen peaches
- 3 ounces Mezcal
- ½ oz honey simple syrup
- Club soda
Honey Simple Syrup
- ½ cup water
- ½ cup honey
Instructions
- In a blender, combine the peach and simple syrup. Blend until smooth.
- Fill a cocktail shaker with ice. Add the peach mixture and mezcal. Shake well for 15–20 seconds.
- Pour into a cocktail glass and top with club soda. Garnish with peach wedges.
Honey Simple Syrup
- Combine the water and honey in a small saucepan. Bring to a boil over medium-high heat, stirring constantly until the honey dissolves. Let cool to room temperature. Store in an airtight container in the refrigerator for up to 2 weeks.
