These steak bites are a gourmet steak appetizer that comes together in just a few minutes. Bite-sized steak are seared until perfectly crispy and filled with flavor from the garlic butter sauce. Serve it with blue cheese sauce for the perfect bite!

Ingredients
2poundsbeef sirloin steak or tri-tip1-inch thick, cut into 1-inch pieces
Season the steak with salt and pepper. Heat oil in a large cast-iron skillet over medium-high heat. Add the steak bites, careful not to overfill the pan. You may need to cook in batches.
Cook 1 to 2 minutes until browned, flip cook 1 to 2 minutes and flip again. Cook, turning occasionally until most sides are browned and crispy and the steak is medium-rare, 1 to 2 minutes. Transfer the steak pieces to a rimmed platter. Repeat the cooking process with the remaining steak pieces.
Once the steak bites are browned, reduce the heat on the skillet to medium. Do not wipe out the skillet. Add garlic. Stir 30 seconds.
Add beef broth and scrape up the brown bits in the skillet. Add butter and Worcestershire sauce. Stir until butter is melted. Taste for salt and pepper.
Add steak bites back to the skillet and toss to coat with the sauce. Sprinkle with chives and serve.
Gorgonzola Dipping Sauce
In a medium saucepan, add heavy cream and thyme. Bring to a simmer over medium-high heat. Simmer for about 10 minutes, stirring occasionally and allow the mixture to thicken. It should recue by ⅓.
Remove the pan from the heat and discard the thyme. Stir in the cheese and nutmeg until melted. Taste for salt and pepper.

Storing Leftovers
Steak bites are best when served immediately, but you can store leftovers in an airtight container for up to 4 days. Store the cheese sauce in an airtight container in the fridge for 3-4 days, When ready to use, reheat it on medium-low heat on the stovetop. If you have extra sauce, you can use it for pasta, gnocchi, and veggies!
