- Steak- I recommend using beef sirloin steak or tri-tip roast. You can always choose fancier cuts, like New York strip steak, marbled rib eye, or even fillet mignon. But I personally like to save those cuts for grilling or special occasions.
- Beef Stock- A flavorful base for the garlic sauce. Choose a low-sodium broth.
- Butter- The flavor of the butter really shines in this recipe, so use a good-quality unsalted butter.
- Worcestershire Sauce- The salty, umami flavors of the Worcestershire sauce instantly adds a depth of flavor to the steak bites. You can also swap it with tamari.
- Blue Cheese Sauce- This creamy dipping sauce is made with gorgonzola cheese, heavy cream, thyme, and nutmeg. It pairs perfectly well with the steak!
- Salt and Pepper- To season the steak and garlic sauce. It's best to start with a small amount to make it easier to taste and adjust later.
⏲️How to Make an Easy Steak Appetizer
- Cut the steak into bite-sized pieces, about 1-inch thick. Season with salt and pepper, and use your hands to evenly spread the seasoning.
Add the steak cubes to a preheated skillet. Don't overcrowd the pan so that each piece gets a good sear on all sides. Work in batches if needed.
- In the same skillet, add the garlic and let it cook in the steak juices for 30 seconds. Deglaze the pan with beef broth, and use a wooden spoon to scrape up the brown bits and get all the flavor.
Stir in butter and Worcestershire sauce, then add the steak bites back to the skillet to coat.
- Let heavy cream and thyme simmer, stirring occasionally until it thickens. Stirring also helps prevent it from sticking to the bottom.
Remove the sauce from heat before adding the cheese to prevent it from becoming grainy. Stir in the cheese and nutmeg until it's smooth and well-incorporated.

If you want to have a variety of dipping sauce options, I recommend making chimichurri sauce, honey mustard, or horseradish aioli.

🌡️Make Ahead
Make the sauce ahead and store it in an airtight container in the fridge for 3-4 days. When you're ready to use it, slowly reheat it on the stovetop at medium-low heat.

Steak Bites Appetizer with Blue Cheese Sauce
Ingredients
- 2 pounds beef sirloin steak or tri-tip 1-inch thick, cut into 1-inch pieces
- 1 teaspoon kosher salt
- ¾ teaspoon black pepper
- 2 Tablespoons vegetable oil
- 2 cloves garlic minced
- ⅓ cup beef stock
- 4 Tablespoons unsalted butter
- 1 Tablespoon Worcestershire sauce
- 1 Tablespoon fresh parlsey minced
Gorgonzola Dipping Sauce
- 1 ¾ cups heavy cream
- 2 sprigs fresh thyme
- 3 ounces gorgonzola cheese crumbled
- ¼ teaspoon ground nutmeg
Instructions
- Season the steak with salt and pepper. Heat oil in a large cast-iron skillet over medium-high heat. Add the steak bites, careful not to overfill the pan. You may need to cook in batches.2 pounds beef sirloin steak or tri-tip, 1 teaspoon kosher salt, ¾ teaspoon black pepper, 2 Tablespoons vegetable oil
- Cook 1 to 2 minutes until browned, flip cook 1 to 2 minutes and flip again. Cook, turning occasionally until most sides are browned and crispy and the steak is medium-rare, 1 to 2 minutes. Transfer the steak pieces to a rimmed platter. Repeat the cooking process with the remaining steak pieces.
- Once the steak bites are browned, reduce the heat on the skillet to medium. Do not wipe out the skillet. Add garlic. Stir 30 seconds.2 cloves garlic
- Add beef broth and scrape up the brown bits in the skillet. Add butter and Worcestershire sauce. Stir until butter is melted. Taste for salt and pepper.⅓ cup beef stock, 4 Tablespoons unsalted butter, 1 Tablespoon Worcestershire sauce, 1 Tablespoon fresh parlsey
- Add steak bites back to the skillet and toss to coat with the sauce. Sprinkle with chives and serve.
Gorgonzola Dipping Sauce
- In a medium saucepan, add heavy cream and thyme. Bring to a simmer over medium-high heat. Simmer for about 10 minutes, stirring occasionally and allow the mixture to thicken. It should recue by ⅓.1 ¾ cups heavy cream, 2 sprigs fresh thyme
- Remove the pan from the heat and discard the thyme. Stir in the cheese and nutmeg until melted. Taste for salt and pepper.3 ounces gorgonzola cheese, ¼ teaspoon ground nutmeg
