🧾Ingredient Notes
- Salami- Salami should be thinly sliced to make the chips crispy and around 2-3 inches round to hold the toppings. You can also use large pepperoni.
- Ricotta- Use ricotta or a mix of ricotta and mascarpone. I do not recommend using other types of cheese, especially feta, since it is too salty.
- Honey- You can use hot honey or make your own with hot sauce.
- Hot Sauce- Use a vinegar-based hot sauce like tabasco to mix with honey. You can add less or skip it if you don't like spicy.
- Fresh Chives- A little pop of color, fresh parsley works too.

⏲️How to Make Salami Crisps with Ricotta

- Arrange the salami on a baking sheet in a single layer without overlapping. Bake for 10 minutes or until the edges are crisp.

- Transfer them to a plate with paper towels to soak up any extra oil. Let them cool down a bit before adding any toppings.

- Using a food processor or handheld mixer, whip the ricotta cheese until smooth and creamy. It should be good to go if there are no big lumps. You can add a pinch of salt if desired.
In a separate bowl, whisk together honey and hot sauce. Adjust the taste to your preference.

- Add the dollops of whipped ricotta and honey drizzle just before serving to keep the chips crispy.
Expert Tips
- If you want to make salami cups, use 4-inch sliced salami. It shrinks when you bake it, so you need a bigger slice to form the cup.
- Warm the honey to make it easier to mix with the hot sauce.

Salami Chips with Whipped Honey
Ingredients
- 4 ounces salami 2 to 3 inch in diameter
- 1 cup ricotta
- ¼ cup honey warmed slightly
- 2 teaspoons hot sauce like tabasco
- 2 Tablespoons minced fresh chives
Instructions
- Preheat oven to 375 F degrees. Lay the salami out on a sheet pan in a single layer. Bake for 10 minutes until the edges are crisp. Drain on a paper towel.4 ounces salami
- While the salami is baking, place the ricotta in a small food processor (or use a handheld mixer) and process until smooth. About 2 minutes, there may be a few small lumps.1 cup ricotta
- Place the salami crisps on your serving platter. Top with a dollap of whipped ricotta cheese. Mix the hot sauce and honey and drizzle over the honey. Sprinkle with chives.¼ cup honey, 2 teaspoons hot sauce, 2 Tablespoons minced fresh chives
