This creamy cheese sauce is a staple in my kitchen! When I say it goes well with anything, I really mean it. Grilled meat, pasta, veggies, and even chips for game day. It's similar to my flourless cheese sauce, but even more decadent.

- Infused with Fresh Thyme- Fresh thyme adds a subtle earthy taste that helps bring out the savory flavors of the gorgonzola cheese.
- Make-Ahead Friendly- You can make this creamy sauce in advance, store it in the fridge, and gently reheat it when you're ready to use it. It's convenient to have it on hand for dipping and drizzling!
🧾Ingredient Notes
- Gorgonzola Cheese - A type of blue cheese that's made in Italy. It's bold and tangy but milder than other types of blue cheeses. It should be easy to find in grocery stores, but if you can't find it, you can also use Danish blue or Cambozola.
- Heavy Cream- You need to useheavy cream to achieve a thick sauce, since we're not using flour.
- Fresh Thyme- I don't recommend using dried thyme because it has a more concentrated flavor.
- Nutmeg- Adds a warm and subtle sweetness without overwhelming the other flavors. A pinch of cinnamon or mace will work if it's not available.
⏲️How to Make Gorgonzola Sauce
- While simmering the heavy cream, stir occasionally until the mixture thickens. Once it starts to bubble, you can reduce the heat to medium to keep it from boiling over.
- Remove from the heat, remove the thyme sprigs, then add the gorgonzola and nutmeg. Stir gently until the cheese fully melted and incorporated.
- Taste and season with salt if needed. You can store it in an airtight container in the fridge to use later or serve it immeditately over steak or as a pasta sauce!
🥗What to Serve with Gorgonzola Cream Sauce
This creamy sauce pairs beautifully with juicy steak, like my steak bites appetizer, grilled flank steak or bavette steak. It's also great with grilled chicken or baked salmon.
I like to serve it as a sauce for pasta, such as my gluten-free pasta, ravioli, or even over gnocchi. You can drizzle it on mashed potatoes or serve it with vegetables, like sauteed broccolini or roasted carrots and asparagus. It's also a great dipping sauce for crusty bread.
Expert Tip
Add the cheese slowly, stirring until melted before adding more to help it melt more evenly and prevent any clumping.

Store the gorgonzola steak sauce in an airtight container in the refrigerator for up to 4 days. Reheat it gently on the stovetop on low heat, stirring occasionally until warm and smooth.

Gorgonzola Cream Sauce
Ingredients
- 1 ¾ cups heavy cream
- 2 sprigs fresh thyme
- 3 ounces gorgonzola crumbled
- ¼ teaspoon ground nutmeg
Instructions
- In a medium saucepan, add heavy cream and thyme. Bring to a simmer over medium-high heat. Simmer for about 10 minutes, stirring occasionally and allow the mixture to thicken. It should recue by ⅓.1 ¾ cups heavy cream, 2 sprigs fresh thyme
- Remove the pan from the heat and discard the thyme. Stir in the cheese and nutmeg until melted. Taste for salt and pepper.3 ounces gorgonzola, ¼ teaspoon ground nutmeg
