Strawberry Fruit Butter (No Sugar Added)
A simple sugar-free fruit spread. Only four ingredients using your own favorite berry combination. But my favorite is this homemade strawberry fruit butter!

Ingredients

cups
fresh strawberries
stems trimmed and halved

cup
whole dates
unsweetened
▢
1
cup
water
▢
1
Tablespoon
balsamic vinegar
▢
½
teaspoon
vanilla extract
Instructions
Combine all ingredients in a heavy saucepan. Bring to a boil then reduce to a simmer for 20 minutes or until the dates are softened.
Remove pan from the heat and use an immersion blender to puree the mixture. Alternatively you can use a blender, be careful with the hot liquid!
Return the pan to low heat and cook the mixture until thickened. Depending on berries, 20-45 minutes.

Storage Instructions
Store leftover fruit butter in an airtight container in the refrigerator for 7 to 10 days.
