Whip up this refreshing zucchini salad in under 15 minutes! Fresh zucchini, creamy feta dressing, and fresh herbs are tossed together for a simple and delicious summer salad that’s bursting with flavor in every bite.
Add the pine nuts to a dry skillet over medium heat, stirring frequently, until golden brown and fragrant, about 2-3 minutes. Set aside to cool.
Trim the ends of the zucchini and discard. Cut in quarters. In a medium bowl, toss the zucchini with the olive oil, herbs and pepper.
To assemble, spread the feta dressing on the plate. Top with the zucchini and sprinkle the pine nuts on top.
Creamy Feta Dressing
Blend all the ingredients until smooth. If the dressing is too thick, thin with additional milk 1 teaspoon at a time. Season to taste with salt and pepper
Notes
Store the salad and dressing in separate airtight containers in the fridge. The salt in the feta will break down the zucchini, causing it to be mushy. The zucchini should stay fresh for up to 2 days and the dressing for 3-4 days.
