Ingredients
1ripe peach peeled and pittedor ½ cup peach puree or thawed frozen peaches
1egg whiteoptional but gives the classic frothy texture
Demerara Syrup
½cupdemerara sugar
½cupwater
Instructions
In a blender, combine the peach, lemon juice, and simple syrup. Blend until smooth.
Pour the purée into a cocktail shaker and add the bourbon and egg white. Dry shake (without ice) for 10 seconds to build foam.
Add ice and shake vigorously for 15–20 seconds. Strain into a coupe glass.
Top with a peach slice.
Demerara Syrup
To make the simple syrup, combine the sugar and water in a small saucepan over medium heat, stirring gently until the sugar is fully dissolved. Do not let it boil. Let cool before using.
