For me, dinner is all about the sides and the sauces. And this recipe is essentially a pot roast made with pork. It has the sauce and veggies all in one pot for the best pork roast you have ever made.

🧾Ingredient Notes
- Boneless Pork Shoulder- Also called a boston butt or pork butt, you will need a 4-ish pound piece of meat. You can also use a pork loin roast for this recipe, but do not use pork tenderloin.
- Vegetables- I use the classic pot roast combo of carrots, potatoes (any type), and onion. But you can substitute any mix of parsnips, rutabaga, or celery root. I don't recommend sweet potatoes because I find they fall apart quickly.
- Italian Seasoning - One spoonful gives you the perfect herb blend without reaching for five different jars. Homemade or store-bought both work. You can also try other spice mixes like herb and garlic or poultry seasoning.
- Chicken Broth - You can also use beef broth, veggie broth, or water plus bullion as substitutes.

⏲️How to Make Slow Cooker Pork Roast

- Place sliced onions, potatoes, and carrots at the bottom. This creates a flavorful bed for the pork, they will absorb all the juices.

- Season the pork roast on all sides before adding it to the slow cooker. Add the chicken stock around it, not on top, you don't want to wash off the seasoning.

- Cook covered until tender and the meat easily shreds.

- Let the pork rest before you shred it, then spoon over the juices to keep it moist.

Slow Cooker Pork Roast with Vegetables
Ingredients
- 1 large yellow onion sliced
- 6 potatoes cubed
- 3 carrots sliced
- 4 pound pork shoulder roast recommend, 4 to 6 lbs
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup chicken broth
Instructions
- Grease the slow cooker with cooking spray or oil. Layer onions, potatoes, and carrots in the bottom.1 large yellow onion, 6 potatoes, 3 carrots
