My egg-free sweet potato hash is delicious on its own, but drizzle on some a quick homemade honey mustard, or smoky red pepper cream sauce, and suddenly, you've got a breakfast worth waking up for.

🧾Ingredient Notes
- Smoked Salmon- You can use cold or hot smoked salmon. I have also used leftover baked salmon for this recipe and I can tell you it tasted just as good.
- Sweet Potato- Keep the skin on for more texture.
- Bell Pepper- Any color works! Red and yellow add sweetness, while green has a slightly sharper taste.
- Onions- White, yellow, or red onions all work.
- Spinach- Swap with kale or arugula.
- Fresh Rosemary- You can use fresh thyme or sage in place of fresh rosemary, or use 1 teaspoon of dried rosemary.
⏲️How to Make a Smoked Salmon Breakfast Bowl
- Toss the veggies with olive oil and seasonings.
- Roast until the potatoes are fork tender.
- Stir in the spinach. The pan is hot enough to wilt, no need to return to the oven.
- Divide the roasted vegetables between two plates and top with the salmon. Serve with your favorite sauce.

- You can make the veggies ahead so they're ready to eat the next day.
- Add a 1 minute poached egg, scrambled eggs, or sunny side up egg.
- Try adding leftover sushi rice for a filling rice bowl.

Smoked Salmon Breakfast Bowl
Ingredients
- 1 sweet potato ½ in cubes with skin on
- 1 bell pepper diced
- ¼ cup diced onion
- 2 Tablespoons olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 Tablespoons minced fresh rosemary
- 3 cups baby spinach
- 8 ounces smoked salmon
- homemade honey mustard for serving
Instructions
- Preheat the oven to 425 degrees.
- On a sheet pan (or in a cast iron skillet) toss in the sweet potato, pepper, and onion with the oil, salt, pepper and rosemary. Spread out in an even layer, bake for 20 to 25 minutes, tossing halfway through.
