This creamy chicken salad is my go-to when I want something nutritious without sacrificing flavor. It’s packed with protein and made with a light, mayo-free tzatziki sauce that keeps things fresh and satisfying.
You can turn it into a sandwich, wrap it with pita bread, or over a grain bowl. I absolutely love serving it with a side of roasted potatoes or chickpea salad to round it out!
📖Why My Recipe Works
- No Mayo- My homemade tzatziki dressing is made from scratch with Greek yogurt, fresh cucumbers and fresh dill so it's light, refreshing and there's no need for mayo!
- Packed with Veggies- I use a lot of diced celery in this recipe. It adds a refreshing crunch that I think many chicken salads are lacking.
🧾Ingredient Notes
- Rotisserie Chicken- Leftover rotisserie chicken is a great timesaver for this recipe and also adds great flavor. You can also boil and chop the chicken breasts or thighs, just add salt for flavor.
- Greek Yogurt- If you're out of Greek yogurt, use my sour cream tzatziki recipe with a little mayo.
- Green Onions- You can substitute with minced shallor or use pickled onions
- Cucumber- I recommend using English cucumbers, they're sweeter and have a thinner skin. But regular cucumbers will work too, just remove the seeds.
- Fresh Dill- A must for that classic tzatziki flavor. You can swap half the dill with fresh mint. I don't recommend using just fresh mint.
- Lemon Juice- Fresh or bottled.
⏲️How to Make Tzatziki Chicken Salad
- Cucumbers have a tendency to be watery, so it's important to squeeze out as much moisture as you can with a clean kitchen towel as it can dilute the flavors.
- Pour in the tzatziki dressing and stir until everything is evenly coated. For the best flavor, cover and chill for at least 30 minutes to let the flavors meld.
👩🏻🍳 Expert Tips
- Mince garlic very finely so you don't bite into raw chunks. Use a microplane grater for a smoother result.
- Allow the sauce to sit for at least 15–30 minutes in the fridge before using. This gives the flavors time to meld together.
