📖Why This Recipe Works
- Fluffy- By separating the eggs and beating the egg whites, we can develop structure in the waffle without using gluten.
- Classic- This waffle recipe uses the classic Belgian waffle flavor profile.
🧾Ingredient Notes
- Gluten-Free Flour - This recipe was developed using a one-to-one gluten-free flour blend containing xanthan gum. If your blend does not contain that, you'll need to add it; about ¼ of a teaspoon.
- Eggs- Room temperature eggs work best. For vegan or egg free you can use an egg replacer.
- Milk- This recipe was tested using whole milk, almond milk, and buttermilk. All three work well. I typically use regular milk because it's the easiest and you only need to use baking powder. Buttermilk will give you more tang than whole milk, but you need to adjust the baking powder and add baking soda (see recipe card for details).
- Sugar- You can use any type of sugar you like, from brown sugar, which will give you a really heavy caramelized exterior, to maple syrup. But I like to use just a pinch of regular sugar.
- Vanilla extract- Vanilla is optional, but I think it gives the pancakes a lovely flavor and is really great when you serve them with berries
⏲️ How to Make Gluten-Free Waffles
Before starting, remove the directions on your waffle makers; they have different directions based on the size and the type.
If you're going to use a Belgian waffle maker, you need to make sure that you beat the egg white separately to ensure that your waffles are as fluffy as possible. Mix the dry ingredients and separate the eggs.
Make the Waffle Batter
When you combine the egg yolks, butter, and milk, make sure that your melted butter has been cooled slightly so that you don't curdle the eggs.
Beat your egg whites until stiff and then gently fold them into the batter.
Unlike regular waffles, gluten-free waffles should not have any lumps because there's no worry about developing gluten.
Resting the batter while you preheat your waffle iron will allow it to hydrate the flour.
Make the Waffles
Spoon your waffle batter into the waffle maker; do not completely fill it up, or it will overflow. Cook according to the manufacturer's directions.
The outside should be beautifully golden brown, and the inside should be fully cooked. Serve with your favorite toppings.
How to Keep Waffles Warm
Preheat the oven to 225°F and place a baking pan in the oven. As the waffles are finished cooking, place them on the baking pan to stay warm while you make the remaining waffles. Loosely over with a dry towel.
💭 Waffle Toppings and Mix-Ins
Pancake syrup is traditional waffle topping but try berries and whipped cream for a summer spin. Or make blueberry pancake syrup.
In the Autumn I like pumpkin pancake syrup and chopped pecans or cooked apples and cinnamon.
Eating for dessert? Try ice cream and hot fudge!
Want to change it up? Try mixing in blueberries, chocolate chips, nuts, or shredded coconut.
For a savory option, skip the sugar and vanilla and add shredded cheese, spinach, ham, or bacon.

🌡️Storing Leftovers
To store leftover waffles, let them cool to room temperature first to prevent any steam from making them soggy. Once cooled, place them in an airtight container with sheets of wax paper or parchment paper between the waffles to prevent them from sticking together. You can then refrigerate them for up to 3 days.
How To Freeze Waffles
This gluten-free waffle recipe can be frozen for up to 3 months when properly stored. This is going to be your go-to waffle recipe for
Allow your waffles to cool to room temperature after cooking. Place the layered waffles in a freezer-safe bag, and squeeze at as much air as possible.
How to Reheat Waffles
Place your frozen waffle directly in a preheated oven (350F degrees), toaster oven, or actual toaster (if it will fit). Bake the waffle until cooked through, about 10 minutes in the oven.
I do not recommend reheating your waffles in the microwave.

Fluffy Gluten-Free Waffles (Dairy-Free Option)
Ingredients
- 2 ½ cups gluten free flour blend with xanthan gum
- 2 Tablespoons granulated sugar
- 1 Tablespoon baking powder
- ½ teaspoon kosher salt
- 3 large eggs divided
- 1 ¾ cups whole milk see notes
- 4 Tablespoons unsalted butter melted and cooled
- 1 teaspoon vanilla extract
Instructions
- Place flour, baking powder, sugar, and salt in a large bowl. Whisk to combine.2 ½ cups gluten free flour blend, 2 Tablespoons granulated sugar, 1 Tablespoon baking powder, ½ teaspoon kosher salt
- In a small bowl, mix egg yolks, milk, butter, and vanilla extract. Set aside.3 large eggs, 1 ¾ cups whole milk, 4 Tablespoons unsalted butter, 1 teaspoon vanilla extract
- In a separate medium bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
- Add the egg yolk mixture to the dry ingredients and stir to combine. Gently fold in the egg whites.
- Let the batter rest while you preheat the waffle iron according to the manufacturer's directions or to 400°F if your waffle maker has a temperature gauge.
- Drop large spoonfuls onto greased waffle iron until most of the wells are covered. Close the lid and cook for about 3-5 minutes or until golden brown. Belgian waffle makers will cook closer to 5 minutes while smaller models like the one in the photos will be closer to 3 minutes.
