Miso is a fermented soybean paste that has a really rich, sweet, and salty flavor. If you haven't tried using it in your dishes, then you're really missing out.
It goes so well with many types of foods, I use it for my miso eggplant and miso carrot ginger dressing. Both delicious and worth giving a whirl.

📖Why My Recipe Works
- Full of Flavor- This miso noodle recipe is bursting with flavor from the miso paste and garlic chili paste. Every bite will have that delicious umami taste with a spicy kick. This is a flexible recipe that is just waiting for your personal touch!
- No Soy Sauce - In this recipe, there is no need for both soy and miso. They would be competing flavors and you want the miso to shine.
🧾Ingredient Notes
- Ramen- I used gluten-free ramen noodles, but you can use regular ramen noodles and leave out the spice packet. You can use any noodles you like, such as udon noodles, soba noodles, rice noodles, or even spaghetti noodles. Whatever you use for a cold ramen salad is what you use for this recipe.
- Butter- Substitute with vegan butter or olive oil.
- Miso Paste- There are several types of miso. Use white miso paste for a milder flavor or red miso paste for a deeper umami taste. You can usually find miso in the international aisle at grocery stores or in Asian markets.
- Garlic Chili Paste- You can also use chili garlic sauce or sriracha, but it might be milder and thinner in texture.
- Honey- Substitute with maple syrup to make it vegan.
- Ginger- Use fresh grated ginger or ginger paste. Don't use ginger powder, as it won't have the flavor punch.
- Green Onions- Fresh chopped chives or leeks also work.
- Sesame Seeds- An optional ingredient, but toasted sesame seeds add little crunch and flavor.
💭 Optional Add-Ins
This noodle dish is super easy to customize with your favorite toppings. My go-to toppings are stir-fried broccolini, shiitake mushrooms, and shredded cabbage. You can also add chicken, shrimp, fried eggs, poached eggs, fish, or tofu for extra protein. For additional flavor, adding a drop of toasted sesame oil goes a long way.
⏲️How to Make Miso Noodles
Cook the noodles according to the package instructions until al dente to avoid overcooking.
To make the miso sauce, melt the butter gently over low heat to prevent it from burning. As you add ingredients together, you can taste to adjust. Make it a little saltier, spicier, or sweeter.
Toss the cooked noodles well in the sauce to ensure they are evenly coated.
Using tongs or chopsticks can help distribute the sauce more effectively. Garnish with green onions and sprinkle with sesame seeds before serving!

- You can add a splash of the pasta water or broth to thin out the sauce. I typically add 2 to 3 tablespoons.
- Toast the sesame seeds in a dry pan before sprinkling them on the spicy noodles. This will make its flavor more nutty.

Spicy Miso Butter Noodles
Ingredients
- 2 blocks plain ramen regular or gluten-free
- 2 Tablespoons butter or use vegan butter or olive oil
- 3 Tablespoons miso paste
- 1 Tablespoon garlic chili paste
- 1 Tablespoon honey maple syrup for vegan
- 2 teaspoons ginger paste or fresh grated ginger
- 5 green onions thinly sliced
- sesame seeds optional
Instructions
- Cook the ramen according to the package directions. Discard any seasoning packets that came with the ramen.2 blocks plain ramen
- While the ramen is cooking, make the miso sauce. Melt the butter in a medium sauté pan over low heat. Add the miso, chili paste, honey and ginger. Add ¼ to ½ cup of the water from the noodles. Whisk to combine.2 Tablespoons butter, 3 Tablespoons miso paste, 1 Tablespoon garlic chili paste, 1 Tablespoon honey, 2 teaspoons ginger paste
- Remove the cooked noodles from the boiling water and add to the sauce. Stir to combine. Stir in the green onion, sprinkle with sesame seeds, and serve.5 green onions, sesame seeds
