This oven-roasted green bean recipe with caramelized garlic is based on my sautéed garlic green bean recipe. It has been a reader favorite for years. But many asked for a roasted version. And as the roasted vegetable queen, I had to serve my subjects.
When I make garlic-forward recipes, think of my garlic Cajun sauce or garlic parmesan rice, I like to focus on letting the garlic get sweet without burning.
That is why I made a garlic butter sauce (no extra pan needed) to ensure these aren't your average roasted beans.

📖Why My Recipe Works
- High Heat Roasting- I cook at a slightly higher temperature. The beans blister and caramelize instead of steaming into mush.
- Finish with Garlic- Stirring it in at the end means bold flavor without burnt bitterness.
🧾Ingredient Notes
- Fresh Green Beans - Stick to fresh green beans. Use any variety; french green beans, string beans etc. Canned will get too mushy, and frozen green beans release too much water.
- Olive Oil - Use any neutral oil. The real flavor is the butter.
- Butter - If you're using salted butter, start with ¼ teaspoon salt instead of ½ teaspoon. For a dairy-free version, use plant-based butter.
- Garlic - The key is freshly minced garlic. Skip the jarred stuff for the best flavor. And don't even come at me garlic powder. Just no. But you can substitute roasted garlic!

⏲️How to Make Garlic Roasted Green Beans

- Arrange the green beans in a single layer in a baking sheet so they roast evenly. Toss them halfway through so all the sides caramelize well.

- Melt the butter and mix in the garlic. Spoon over when the beans are about ⅔ way done. Toss the green beans to ensure each one has a little garlic butter.

- The roasted green beans are done when they're tender yet crisp, with lightly browned edges.

- Pat the beans dry with paper towel after rinsing to remove excess moisture.
- If you're going to double the recipe, use two sheet pans so the beans still have space to roast evenly.
- Add an additional layer of flavor with a squeeze of lemon juice, a sprinkle of Parmesan, or a pinch of red pepper flakes adds brightness and takes them over the top.

Easy Garlic Roasted Green Beans
Ingredients
- 1 pound fresh green beans
- 2 Tablespoons olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 Tablespoons unsalted butter melted
- 8 cloves garlic minced
Instructions
- Preheat the oven to 425°F (220°C).
- Spread trimmed green beans on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat, then arrange in a single layer. 🌡️ Storing Leftovers
- Store leftover green beans in an airtight container and refrigerate it for 3-4 days. Reheat it in the oven at 250°F for 5-7 minutes to make it crispy again. Don't microwave, you'll get sad and soggy green beans if you do.
