This recipe is a variation of my original horseradish sauce for roast beef.

Using sour cream helps create a rich and creamy base that balances the bold flavors of horseradish. It pairs perfectly with hearty dishes like prime rib, steaks, or tenderloins.

🧾Ingredient Notes

Prepared Horseradish- Substitute with fresh horseradish root, peeled and grated. Note that it will have a stronger flavor than store-bought prepared horseradish. You may want to add an extra splash of lemon juice for more zing.
Dijon Mustard- Adds a sharp, tangy, and mildly spicy flavor. But you can also use a grainy brown mustard if you like.
Sour Cream- For a thick and creamy base. You can also use Greek yogurt or heavy cream.
Fresh Chives- Swap with fresh dill, parsley, or tarragon.

⏲️How to Make Horseradish Mustard Sauce

Chill in the refrigerator for at least an hour before using. For best results, make it at least a day ahead!

To make the sauce thinner, add a tablespoon of heavy cream or broth until you reach your desired consistency.
