This recipe is a cross between my garlic green beans and spicy miso noodles recipe. The green beans are fresh and crisp, but with all the savory flavors of the noodles.
I love making this when I’m craving something that packs a punch, but don’t have much time. It comes together fast and always hits the spot!
📖Why My Recipe Works
- So much flavor, so little time! Green beans are quickly sautéed in a flavorful sauce until they’re perfectly coated but still crisp, so every bite is packed with flavor.
- No Soy Sauce - In this recipe, there is no need for both miso and soy sauce. They would be competing flavors, and you want the miso to shine.
🧾Ingredient Notes
- Green Beans- Use fresh green beans for the best flavor. Frozen green beans will also work, but you'll need to add them towards the end of cooking. I don't recommend using canned beans.
- Butter- Substitute the butter with vegan butter or olive oil.
- Miso Paste- I used white miso paste, but you can also use yellow or red miso paste. Take note, red miso paste has a deeper, saltier flavor.
- Garlic Chili Paste- Swap with sriracha.
- Honey- Substitute with maple syrup.
- Ginger - You can use ginger paste or fresh grated ginger.
- Chicken Broth- You can also use vegetable broth or warm water.
⏲️How to Make Green Beans with Miso
- Wash and trim the ends of the green beans, then pat them dry with a paper towel to remove any excess moisture.
- Toss the green beans in butter and let them cook for a few minutes to develop a light toast. Then pour in the miso sauce and stir until evenly coated.
- Cover and cook for 6-8 minutes. The green beans should still be bright green and crunchy, so keep an eye on them to avoid overcooking.
👩🏻🍳 Expert Tips
- Miso paste can be clumpy, so whisk it thoroughly with warm broth or water first to dissolve before adding other ingredients.
- Taste and adjust the sauce before pouring it on the green beans. Add a drizzle of honey to make it sweeter, or a splash of lemon juice or rice vinegar to add brightness.

Spicy Miso Green Beans
Ingredients
- 1 pound fresh green beans washed and trimmed
- 2 Tablespoons unsalted butter or use vegan butter or olive oil
- 3 Tablespoons miso paste gluten free, if needed
- 1 Tablespoon garlic chili paste or sriracha
- 1 Tablespoon honey maple syrup for vegan
- 2 teaspoons ginger paste or fresh grated ginger
- ¼ cup chicken broth or water, warmed
- 5 green onions thinly sliced
- sesame seeds optional
Instructions
- Wash and trim the ends of the green beans. In a small bowl, whisk together the miso, ginger, chili paste, garlic, honey and broth, then set aside.1 pound fresh green beans, 3 Tablespoons miso paste, 1 Tablespoon garlic chili paste, 1 Tablespoon honey, 2 teaspoons ginger paste, ¼ cup chicken broth
- Heat the butter in a large skillet over medium heat. Add the green beans and toss to coat.2 Tablespoons unsalted butter, 5 green onions
- Add the miso sauce to the green beans and stir to coat. Cover the skillet and cook for 6 to 8 minutes, until the green beans are bright green and al dente.
- Uncover and reduce the sauce, 1 to 2 minutes. Stir in the green onions and sprinkle with sesame seeds.
Notes
Storing Leftovers
- Store leftovers in an airtight container and refrigerate for 3-4 days. Reheat them on a skillet over low heat to regain the crunchy texture.
