- Sun-Dried Tomatoes- Choose oil-packed sun-dried tomatoes. They have a softer texture and richer flavor than dry-packed ones.
- Red Wine Vinegar- Substitute with balsamic vinegar or white wine vinegar.
- Parsley- You can use other fresh herbs like fresh basil or oregano.

⏲️How to Make Sun Dried Tomato Dressing
- In a blender or food processor, combine all the ingredients except for the olive oil. This helps the ingredients break down more easily before emulsifying with the oil.
- While pureeing the mixture, pour the olive oil into a slow, steady stream to emulsify the dressing until smooth and creamy.
Expert Tip
If the dressing is too thick, add a tablespoon of water to thin it out a bit. Add small amounts of water or vinegar until you reach your desired consistency.

Sun Dried Tomato Vinaigrette
Ingredients
- ⅓ cup sun dried tomatoes
- ¼ cup red wine vinegar
- ¼ cup fresh parsley leaves loosely packed
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ cup olive oil
Instructions
- Combine all the ingredients except the olive oil in a small food processor. Puree for 3o seconds.⅓ cup sun dried tomatoes, ¼ cup red wine vinegar, ¼ cup fresh parsley, ¼ teaspoon kosher salt, ¼ teaspoon black pepper
- Slowly stream in the olive oil while pureeing.½ cup olive oil
