Let's taco 'bout the ultimate game day appetizer. This Velveeta cheese hamburger dip recipe with a hint of taco seasoning and a kick of fresh salsa, is sure to be the MVP of your next gathering.

My go-to game day party menu is easy deviled eggs, spiced (not hot) chicken wings, and loaded sweet potato nachos. Oh and of course, this Velveeta ground beef queso dip. It gives something for everyone vibes.

📖Why This Recipe Works
Made without Rotel- I know a total sin. But canned tomatoes and chilis don't offer enough flavor. Use fresh salsa which includes fresh onion garlic and spices.
Control the Spicy Level- I prefer a spicy dip, but you can use mild or medium salsa for less heat.
Make Ahead- This cheese dip is best made on the stovetop to get the best flavor from the browned ground beef. But you can reheat and serve in a slow cooker for easy hosting.
🧾Ingredient Notes
Velveeta- I use all Velveeta but you can substitute cream cheese (by weight) for half of the Velveeta. I don't recommend using shredded cheese for queso. I mean it is called Velveeta cheese dip for a reason!
Salsa- I prefer to use fresh salsa and I double it, adding half on top when serving. You can also use jarred salsa without issue.
Ground Beef- You drain the excess grease from the browned ground beef to reduce fat content but I prefer lean ground beef. You can also use ground turkey if preferred.
You can also use leftover chili instead of starting from scratch.
Seasoning- I prefer to use individual spices t make my own homemade taco seasonings. And I go heavy on the smoked paprika, it adds so much flavor. You can use storebought taco seasoning but go with low sodium.
⏲️ How to Make Velveeta Dip with Ground Beef
Don't expect anything groundbreaking here. This is truly an easy dip recipe anyone can make.
Use a high-sided saute pan. Heat the oil over medium heat and add the ground beef. Add the seasoning. Stir just to coat the cooked ground beef.
Add the salsa and cheese. Reduce the heat to low and stir until the cheese melts.
Keep warm until serving. I like to top with more salsa and sliced jalapenos for a little extra heat.
🥗How to Serve Velveeta Hamburger Dip
I like to serve any type of beef queso dip in a small crock pot set to warm. It keeps the texture perfect. Serve with tortilla chips and fresh veggies.
You can also serve this cheesy dip as a topping for baked potatoes, over tostadas and topped with lettuce and tomato for a quick lunch, or turn it into a cheesy mac.
Expert Tip
Don't add extra salt until the end. The salsa will contain some salt and Velveeta is fairly high in sodium already.
🌡️Storing Leftovers
Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or on the stovetop on low until heated through.
You can also freeze this dip but it might be grainy when reheated.

Cheesy Velveeta Hamburger Dip
Ingredients
- 1 Tablespoon olive oil
- 16 ounces ground beef
- 1 Tablespoon chili powder
- 2 teaspoons smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- 16 ounces Velveeta cheese cubed
- ¾ cup salsa mild, medium or hot
- Tortilla chips for serving
Instructions
- In a skillet over medium heat, cook the ground beef until the beef is browned, about 5-7 minutes, making sure to crumble the beef as it cooks.1 Tablespoon olive oil, 16 ounces ground beef
- Drain excess fat. Add the spices and mix well to coat the beef. Cook for 1 minute longer.1 Tablespoon chili powder, 2 teaspoons smoked paprika, ½ teaspoon ground cumin, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon dried oregano
- Add the cubed Velveeta cheese and salsa. Stir constantly until cheese is melted and well incorporated, about 2-3 minutes.16 ounces Velveeta cheese, ¾ cup salsa
- Transfer melted cheese dip to a slow cooker or oven-safe dish to keep warm for serving.Tortilla chips for serving
Notes
- Skip the spices and add 2 tablespoons taco seasoning, low sodium recommended.
- Make this recipe 2 to 3 days in advance. Store in an airtight container in the fridge. Reheat over low heat or in a crockpot.
