This apple cider syrup is a cozy, spice-filled treat that tastes like autumn in a cup. Unlike plain reductions, mine gets an herbal twist from rosemary and a full bouquet of whole spices - cinnamon, cloves, and star anise - that slowly infuse into the cider as it simmers.

- Slow Simmer- Cooking gently prevents crystallization and gives you a velvety, pourable syrup. Trust me when I say I learned this the hard way.
🧾Ingredient Notes
- Fresh Apple Cider - Use fresh, unfiltered cider for the best flavor. Clear apple juice won't give you the same depth.
- Orange - Fresh orange juice (and the squeezed halves simmering in the pot) adds brightness that balances the rich spices. You can substitute lemon for a tart flavor profile.
- Spices- Use whole spices not ground. Watch how much star anise you use, it has a slightly licorice flavor and can overpower the syrup if you aren't creful.
- Fresh Rosemary - Thyme is the best substitute if you aren't a rosemary kind of person. Do not use dried herbs.

⏲️How to Make Apple Cider Syrup

- Add all the ingredients to a pan and bring to a boil. Immediately reduce the heat to a gentle simmer.

- To concentrate the apple flavor, you need to reduce the cider to about ½ cup. This will take at least 20 minutes. don't rush it!

- Strain the syrup and cool before using. It will thicken slightly but still be easily pourable.

Keep the heat low and steady. If you rush the simmer, the natural sugars can crystallize or burn. Aim for a gentle bubble around the edges of the pan, not a rolling boil.

Apple Cider Syrup
Ingredients
- 2 cups apple cider
- 1 medium orange
- 5 pieces whole star anise
- 1 teaspoon whole cloves
- 3 cinnamon sticks
- 2-4 sprigs of fresh rosemary
Instructions
- In a small saucepan, combine apple cider, orange (halved and squeezed), star anise, cloves, cinnamon sticks, and rosemary. Place on the stove over medium-high heat, and bring to a boil.2 cups apple cider, 1 medium orange, 5 pieces whole star anise, 1 teaspoon whole cloves, 3 cinnamon sticks, 2-4 sprigs of fresh rosemary
- Reduce heat to medium-low, and simmer for about 15-20 minutes, until the mixture has reduced to about ½ cup of syrup. Strain and let cool.
Notes
- This cider syrup will last in the refrigerator for up to 1 week, so feel free to prep a few days in advance of when you need it.
