This Lavender French 75 takes the classic champagne cocktail and dresses it up with a soft floral twist. Using my Lavender Simple Syrup and jewel-toned Empress gin, you get a drink that's lightly sweet, citrusy, bubbly, and as gorgeous as it is refreshing. The lavender flavor is subtle, never soapy, making this an elegant choice for brunch or bridal showers.

The French 75 is a classic cocktail typically made with a sugar cube (or simple syrup), cognac or gin, and topped with a dry champagne or sparkling wine and a lemon peel twist. But most often, you will see this refreshing cocktail served with gin.
Which is why I chose to use Empress 1908 gin. The purple color echoes the addition of the lavender syrup. And also because it tastes great. It also has citrus notes, which work well with the lavender-infused syrup.
📖Why My Recipe Works
- Floral Notes- I use less dried lavender in my syrup. I want to keep the simple syrup as a supporting character and avoid it being overly perfumy. You can always add more or steep longer.
- Show-Stopping Color - Empress gin brings a natural purple hue that pairs beautifully with the floral notes.
🧾Ingredient Notes
- Lavender Syrup - The heart of this cocktail. Mine uses less lavender for a clean, delicate taste. Make ahead and keep in the fridge for up to a month. You need to make the syrup with dried lavender and not fresh lavender, which will give it a woody taste.
- Gin - Empress gin gives a beautiful purple color, but you can use your favorite gin if you don't mind a paler drink.
- Fresh Lemon Juice - Brightens and balances the sweetness; always squeeze it fresh.
- Prosecco - Champagne or another sparkling wine works just as well-choose something dry so it doesn't compete with the syrup. A French 75 should be refreshing and not too sweet.
⏲️How to Make a Lavender French 75

- Steep the syrup for at least 15 minutes and strain out using a fine mesh strainer. It won't be bright purple because the flower's pigments don't extract well into water.

- You can typically fit at least 4 drinks into the shaker. When the outside is frosted over, you know the drink is cold enough.

- Strain into your champagne glass (or glasses).

- Top with the sparkling wine and garnish with a lemon twist or a sprig of lavender.

Make the lavender syrup ahead of time and store it in the fridge. You can use any leftovers in lattes or lemonade.

Lavender French 75
Ingredients
- 1 ½ ounce Lavender Simple Syrup
- ¾ ounce Empress gin or your favorite kind of gin
- ½ ounce fresh lemon juice
- 2 ounces Prosecco or sparkling wine
Lavender Simple Syrup
- 1 cup granulated sugar
- ¾ cup water
- 1 Tablespoon dried culinary lavender
Instructions
- Fill a cocktail shaker about halfway with ice. Add the gin, simple syrup, and lemon juice to the shaker. Add the lid, and shake vigorously for about 20 seconds, or until the outside is frosted over.1 ½ ounce Lavender Simple Syrup, ¾ ounce Empress gin, ½ ounce fresh lemon juice
- Remove the lid and strain into a coupe glass or champagne flute. Top with Prosecco and a fresh lemon twist.2 ounces Prosecco
Lavender Simple Syrup
- Combine the water and 1 cup granulated sugar in a saucepan, stirring over medium heat until the sugar dissolves.¾ cup water, 1 cup granulated sugar
- Remove the sugar mixture from the heat and stir in the lavender flowers. Set aside to let steep for about 15 minutes. Once steeped, strain through a fine mesh strainer and allow to cool for another 15 minutes.1 Tablespoon dried culinary lavender
Notes
- Empress gin will give your lavender cocktail a purple hue. Without it, expect the cocktail to be much lighter in color.
Storing Leftovers
- Store leftover syrup in an airtight container in the refrigerator for up to 1 month.
