This is the same lavender syrup recipe I use in my Lavender French 75. Yet it is subtle enough to complement coffee, tea, and lemonade, without overpowering them.
📖Why My Recipe Works
- Sugar Ratio- A basic simple syrup is a 1 to 1 ratio of sugar to water. A rich syrup is 2 parts sugar to 1 part water. I find that with the aromatic nature of the syrup, a little sweeter is the way to go.
- Floral Notes- I use less lavender than most recipes, like with my sage simple syrup, I want to keep the simple syrup as a supporting character and avoid it being overly perfumy. You can always add more or steep for a longer time.
🧾Ingredient Notes
- Granulated Sugar - I use basic cane sugar; you can use white or coconut sugar.
- Water - Filtered water helps keep the flavor clean and crisp.
- Dried Lavender Buds- Use food-grade dried lavender buds, not fresh lavender from the garden stems, which can taste woody

⏲️How to Make Lavender Simple Syrup

- Dissolve the sugar in the water in a small saucepan over medium heat.

- Add the lavender and let it steep for 15 minutes, then strain the syrup.
👩🏻🍳 Expert Tip
If the floral flavor is too strong, add a little fresh lemon juice. The acid will brighten up the flavor and neutralize the flavor.

Honey Lavender Syrup
To make lavender lemonade, I prefer this version. I love honey and lemon together! Swap out the sugar for an equal amount of honey. Still heat to dissolve the honey.

Lavender Simple Syrup
Ingredients
- 1 cup granulated sugar
- ¾ cup water
- 2 teaspoons dried culinary lavender
Instructions
