📖Why My Recipe Works
The egg white is key to adding a creamy mouthfeel to the drink, but if you're not a fan of raw eggs, you can swap it with aquafaba.
🧾Ingredient Notes

- Dry Gin- Use a classic London dry gin like Bombay Sapphire or Tanqueray.
- Simple Syrup- Adds sweetness to balance our the tart flavors of aperol and lemon. Follow my microwave simple syrup recipe.
- Lemon- Use fresh lemon juice and save some of the peel for garnish.
- Egg White- Substitute with 2 tablespoons of aquafaba for a vegan version.
⏲️How to Make an Aperol Sour
- Shake the ingredients vigorously without the ice for a solid 30-seconds to fully emulsify the egg white. Then, add ice and shake for 15-20 more seconds, just until the drink is chilled.
- Strain the drink into a chilled coupe glass to keep your drink cold for longer. Then, garnish with a lemon twist.

- Taste and adjust before adding the ice. For a sweeter cocktail, add a splash more simple syrup. If you want the citrusy flavor to shine, squeeze in a bit more fresh lemon juice.

Aperol Sour
Ingredients
- 1.5 ounces Aperol
- 1 ounce dry gin
- ½ ounce simple syrup
- ½ ounce lemon juice
- 1 ounce egg white raw
- lemon peel for a garnish
Instructions
- Add all ingredients to a cocktail shaker (WITHOUT ICE), dry shake for 30 seconds to help emulsify egg.1.5 ounces Aperol, 1 ounce dry gin, ½ ounce simple syrup, ½ ounce lemon juice, 1 ounce egg white
- Add a scoop of ice and shake for another minute.
- Strain into a chilled cocktail glass and serve with a twist.lemon peel
